Ingredients for Penna Cotta
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 1/2 teaspoons unflavored gelatin
- 3 tablespoons cold water
Instructions
- In a small bowl, sprinkle gelatin over the cold water and let it sit for 5 minutes to bloom.
- In a saucepan, combine the cream, milk, and sugar. Heat over medium heat until the sugar dissolves, but don’t let it boil.
- Remove the saucepan from heat, stir in the vanilla extract, and then whisk in the gelatin mixture until completely dissolved.
- Pour the mixture into individual serving glasses or molds, and refrigerate for at least 4 hours (or until set).
Ingredients for Raspberry Sauce:
- 1 cup fresh or frozen raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- Extra raspberries for garnish (optional)
Instructions
- In a small saucepan, combine raspberries, sugar, and lemon juice. Heat over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens (about 5–7 minutes).
- Strain the sauce through a sieve to remove seeds (optional) and let it cool.
Assemble and Serve:
