Ingredients for Penna Cotta

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 teaspoons unflavored gelatin
  • 3 tablespoons cold water

Instructions

  1. In a small bowl, sprinkle gelatin over the cold water and let it sit for 5 minutes to bloom.
  2. In a saucepan, combine the cream, milk, and sugar. Heat over medium heat until the sugar dissolves, but don’t let it boil.
  3. Remove the saucepan from heat, stir in the vanilla extract, and then whisk in the gelatin mixture until completely dissolved.
  4. Pour the mixture into individual serving glasses or molds, and refrigerate for at least 4 hours (or until set).

Ingredients for Raspberry Sauce:

  • 1 cup fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • Extra raspberries for garnish (optional)

Instructions

  1. In a small saucepan, combine raspberries, sugar, and lemon juice. Heat over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens (about 5–7 minutes).
  2. Strain the sauce through a sieve to remove seeds (optional) and let it cool.

Assemble and Serve:
